This is working



Almost to my goal for April with the diet. I am not quite sure what I weighed when I started. Well, I know what I weighed before I started, but then I weighed myself again and was 5 pounds lighter. Not that this is a bad thing. LOL. At any rate, I am down 13 pounds for the year. About 3 pounds to my goal. I am not snacking between meals. I don't feel hungry and really like the fact that I can have fruits with this plan. Even though it is similar to Atkins and South Beach, both of those don't allow fruits the first two weeks. I have been making the Egg-White Omelet with Spinach and Cottage Cheese from the January/February issue of Everyday Food. It’s quick (10 – 15 minutes), tasty, and fits the 17 Day Diet.

This one isn’t listed online, so here are the ingredients:

3 large egg whites
Coarse salt and ground pepper
1 teaspoon olive oil or olive oil spray
1 cup packed baby spinach
1/4 cup Live Active cottage cheese
2 tablespoons grated Parmesan

In a medium bowl, I whisked together the egg whites and 1 tablespoon of water. I seasoned with salt and pepper and set the whites aside.

Next, I heated the olive oil or spray the pan and over medium-high heat in a nonstick omelet pan (8″ skillet). I added the spinach, seasoned with salt and pepper, and cooked it until it was wilted and tender (1 minute). I added the egg whites and cooked until they were nearly set, using a flexible heatproof spatula to lift the edges of the omelet to let the uncooked whites run underneath.

Once the eggs were cooked (about 2 minutes), I dolloped the cottage cheese on top of the omelet, sprinkled it with the Parmesan, and seasoned again with salt and pepper. I slid it gently onto a serving plate, folding it over itself by tipping the skillet.

Next on the agenda-Cleaning! I am going through pictures, lots and lots of pictures. What to do with all this stuff? I will send the kids all their school pics along with others that I think that they will like. Then finish shredding papers and organize all of that. I will
get going on selling a few things every week or so on ebay and get the crafty items on Etsy. My goal is to have it all cleared out by the end of the year. Of course, I need to then bring down the rest of the stuff from Ohio that is in the garage up there. Lots to do, but it is moving along slowly.

I think that I will start on the second cycle of the diet, adding some carbs, beef, and seafood, but instead of every other day, I am going to introduce it only twice a week to start and after two weeks add another day. Water and exercise will be the next hurdle to overcome. Baby steps I guess. As for knitting? I am working slowly on the fingerless gloves that match the cowl. I may make several sets as gifts. I will open up the box that I received to continue on our sweater/shawl exchange. I may do another beaded butterfly, but in different colors now that I have the hang of it. It is a little different than everyone else is doing. I have an idea for Kathy's sweater, so I should start on it now, too. I need to use up my stash yarn and start knitting socks of which I can make about 14 pair. Back to sorting!
